When you find your self in a situation like that then you do not remember much of the teachings. Anyways 1 main mistake here is that the instructor is not evading the attack his belly is in the same place instead of moving backwards or to the side. And holding a hand that is coming much faster is best to use both hands to stop the wrist. Anyways nothing is perfect and we all will do what we can to survive.

If you let them get that close you're already fucked. There's a video of a guy stepping to another dude who was trying to walk away and the guy just turns around, taps him once in the throat and runs. The guy didn't even realize he'd just been stabbed till he felt the warmth start to drain from his neck, and you watch him hold his hand up to his neck, start to stumble and fall over and he was dead before the video ended. It happened so fast you barely even perceive it. Bottom line, don't put yourself in a situation where you're likely to get stabbed and if they pull a knife, run the fuck away.

I was attacked by an id10t with a knife , had to defend myself by grabbing the wrist then controlling the arm throwing the attacker to the ground then getting away asap. You will be surprised at what works and what doesnt work
